Carrot Cake Recipe

Ingredients:
3 cups grated carrot
4 eggs
1 cup vegetable oil
2 cups sugar
2cups sifted plain flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
1teaspoon salt
1/2 teaspoon ground nutmeg
1 cup raisins or sultanas
Method:
beat together eggs, oil, and sugar. blend mixture for thirty seconds.
sift together flour, baking powder, salt, baking soda and spices.
add the carrots and raisins.
pour egg mixture into dry ingredients, and mix well.
pour batter into well greased tin and bake in 350 deg. oven for 45 to 50 mins.
Icing: cream cheese at room temperature, blend with icing sugar vanilla and some maple syrup
